Homemade chicken burgers
Everyone loves a burger but the freshness of a homemade burger takes your enjoyment to another level.
This simple but tasty dish is a real favourite in our house that we tend to cook on a weekend as a treat.
Ingredients.
- Chicken breasts. One breast will make two burgers.
- Two eggs.
- 100g of Panko breadcrumbs. You can use regular breadcrumbs if you want but we find that panko crumbs add an extra pleasing crunch!
- Salt and pepper.
- Two teaspoons of smoked paprika. (optional)
- Vegetable oil.
- Burger bun.
- Lettuce.
- A sliced tomato.
- Sliced cucumber.
- Thinly sliced red onion.
- Sliced cheddar cheese.
- Crispy bacon.
- Sauces and mayonnaise to suit your taste. We like garlic mayonnaise and barbeque bourbon sauce.
Method.
Add your salt and pepper and smoked paprika to your panko crumbs in a bowl.
Whisk two eggs in a bowl.
Lay a sheet of cling film onto your chopping board and place your chicken breast on top. Lay another sheet of cling film over the top of the chicken so the chicken is encased in the middle of your cling film.
You are now going to flatten the chicken breast out by hitting it with a rolling pin. Try to beat it evenly until you have a flat piece of chicken. The cling film not only makes this much cleaner but also helps hold the chicken together so it doesn’t break.
Cut your flat chicken breast in half so you have two pieces. Dip your chicken into the beaten egg and then coat your burger in the panko crumbs until it is fully coated.
You are now ready to shallow fry your chicken burger. This will take around five or six minutes, to make sure that your chicken is cooked evenly turn your burger every couple of minutes. This will also ensure that your breadcrumbs are evenly brown. I always cut part of the way into the middle of the chicken to make sure that it is white in the middle before serving my burger.
Your burger is now ready to prepare however you would like. We like to have mayonnaise on the bottom with lettuce, tomato, and cucumber, then the chicken burger with a bit of cheese melted on top. We sprinkle finely sliced red onion on top, a slice of bacon, and top with bourbon sauce. We often pair this with our triple-cooked chips and homemade onion rings.
